I have been on the outlook for new dishes, so i bought some books give some ideas.
"Hawkers secret recipes" is a collection of over 70 Malaysian Chinese mixed rice stall recipes.
This new dish was very well recieved by the children.
THe secret to the dish is tau kwa, it needs to be fresh as its much softer on the day you bought it.
Anyway, you can keep for a day or two soaked in salted water if its left in the fridge
Ingredient
4 pcs taukwa (bean curd)
200g minced pork
1 tsp chopped garlic
11/2 tbsp salted bean paste
200ml watercornstarch solution (for thickening)
1 tbsp red chilli
1 tbspc spring onion
Seasoning
1/2 tbcp oyster sauce
1tsp light soy sauce
1tsp sugar
1 tsp chicken grandule ( I use stock instead)
1/2 tsp dark soy sauce'1tbsp "shao xing" wine
Method
1. Deep fry taukwa at high heat till golden brown, drain well
2. Leave 1 tbsp in wok, add garlic fry till frgrant followed by bean paste. Add minced pork stire briskly until aromatic or the colour changed
3. Add in water and seasoning, bring to a boil. Thicken the grvy with constarch solution.
4. Removed from heat and pour the gravy over the fried taukwa, garnish with spring onion and chilli
