I have not made fried dough fritters with filling for a long time.
It is actually very simple to make, excluding making the dough fritters
Just go to any neighbourhood market that sell dough fritters and ask for "white" instead golden dough fritters
Reason: you do not want a burnt dough fritters when you fry it with filling
Ingredients
fish paste
prawn paste
sotong paste
meat paste
Note: You can use any of this two combination to form the filling base followed by seasoning
Seasoning
sesame oil
pepper
salt (i omit as the fish paste was salted)
Method
Mix the paste and seasoning till well mixed
Cut the dough fritters into 3-4 smaller plc, then cut a slit length wise
Put in 1 tbsp of mixed paste into the slit
Deep fry with the filling face down till golden brown
So far the best dough fritters that i like are found at bendemeer and bedok 216 hawker centre
