I had a gathering to attend and last minute decided to bring pizza ..... wondering which recipe to use?
Peter Reinhart's recipe will take a day ... so i quickly surfed the internet for a quick and reliable recipe .....

Its a quick and easy pizza dough that is extemely easy to handle. I replace semolina with whole wheat flour, also the original recipe makes a lot of pizza - 6 to 8 medium size so i half the recipe

400g strong white bread flour & 100g finely ground semolina flour
1/2 tablespoon fine sea salt
7g of dried yeast
1/2 tablespoon caster sugar
2 tablespoons extra virgin olive oil
324 ml lukewarm water
Method
1. Put everything into the mixer and mixed till about 5-7 mins
2. Place the ball of dough in a large flour-dusted bowl and flour the top of it.
3. Cover the bowl with a damp cloth and place in a warm room for about 1 hour until the dough has doubled in size.
4. Now remove the dough to a flour-dusted surface and knead it around a bit to push the air out with your hands - this is called punching down the dough. You can either use it immediately, or keep it, wrapped in plastic wrap, in the fridge (or freezer) until required
