It been a while since mum made pumpkim kuih, i decided to try it out myself this time
This recipe yield about 2 of 9 inch round pan. Always line the tray with cellopane paper (heat resistant) for easy removal (alternatively simply grease the pan). I simply agar agar the quantity, in fact if you put in more ingredient, it will taste nicer
Ingredient
1/4 of a pumpkin shredded into strips
dried shrimp abt 1 rice bowl size diced
mushroom 10 pcs diced
shallots 1 bowl sliced
rice flour 600g
water 6 rice bowl
salt 1 tsp
sugar 1 tbsp
fish sauce 1 tsp
Method
1. Stir fry shallots till fragrant then put in dried shromp and mushroom and fry till fragrant
2. Add in shredded pumpkin to the mixture, add in fish sauce aboout 1 tsp and fry till soft. (Add water occasionally when its dry)
3. Dissolve rice flour in 6 bowl of water in a mixing bowl. Add in salt and sugar
4. Pour the rice flour mixture into the fried ingredient turn fire to big. Continue to stir till the mixture thickened and turn translucent
5. Pour the mixture into 2 9' baking pan and steam for 30-35 mins in med flame till centre comes out clean when poked
