Is is apple pie or is it a cake?? Frankly, i have no idea!
I made some apple pie filling based on the recipe by Jamie Oliver in his book Jamie's dinner, but i was too lazy to bring my mixer out to make the tart dough.
Somehow get the inspiration on the forum and decided to search for some similar recipe online:
Here's what i did:
Ingredients
3 cup flour
1 tsp baking soda
1/2 tsp salt
11/2 cup veg oil (olive oil)
3 large eggs
1 cup sugar
1tbsp rum
1tsp vanilla
apple pie filling
5 apple chopped into 1/8 to 1/4 size (mixture of green granny smith and red apple)
1/2 cup raisins
lemon zest
1/2 cup sugar
1 tsp cinnamon
Topping
45g flour
45g butter
2 tbsp sugar
Method
1. Boil all the ingredient for apple pie filling with 1/2 cup water for 10 mins
2. Shift flour, baking powder and salt
3. Mix oil, egg, sugar, vanilla, rum with a whisk
4. Fold in the dry mixture into the wet ones followed by apple pie filling
5. For topping, cut the cold butter into small pieces then rub with flour and sugar to form breadcrumb like texture
6. Pour mixture into in greased square tray of 30x30cm sprinkle topping over before baking
7. Bake in preheated oven of 180 deg for 11/4hour
The cake is very soft with a crispy topping. I might have put in too much pie filling causing the cake to crumble a little after baking
Anyway. a great way to reuse apple pie filling.
