Sice fruit cake is my mum's favourite, the hunt for interesting made me go for classes again
Here's the result:
The use of dried pineapple, mango, sultana and apricot create a taste that is much lighter than traditional fruit cake. In addition, i soak the rum for almost 3 weeks, that helps to increase its flavour.
This cake took 4 hours or more to bake, next time will use a bundt pan!!
Having baked so many things with egg yolk, egg white seems to be neglected
I managed to find this recipe of almond crisp from that uses only egg whites and best of all residual heat while the oven cools.
